Preparation
#1: 5min

If the chicken breast is frozen, place it in the microwave for 1-2min to thaw it slightly. It will be easier to slice if it's not completely thawed. Meanwhile pull together the rest of your ingredients and place a large frypan on the stove. If you'll be cooking tofu at the same time, place 2 frypans on the stove side-by-side. It's also time to put a large pot of water on high for the linguine.

Now remove the chicken from the microwave and slice it in half across and lengthwise, or in a way that you end up with about four equal-size pieces.

Method
#1: 15min

Pour the olive oil into the frypan and turn the heat to medium-high. Sprinkle the salt, oregano and breadcrumbs onto the chicken and move it around/flip it over so that it's evenly coated. Place the chicken into the warmed pan and cover with a lid. Set the timer for 5min. Now, if you're making the tofu at the same time, go ahead and get that cooking too. Pour the oil into a non-stick or heavy frypan over medium-high heat. When warm, add the tofu - no lid needed. The water for the linguine should just about be boiling now, go ahead and add the pasta to the water, stirring it in gently and adding some salt, if you like. Flip both the chicken and tofu after about 5min, they should be lightly golden brown. Cook for another 5-7min, lowering the heat to medium if necessary so that it doesn't get too dark too quickly. When they are both golden and done, turn the heat to low and pour the tomato sauce around the pieces in the pan. Sprinkle with Parmesan and heat for 1-2min. Drain the pasta, running it under cool water and tossing with a bit of olive oil. Time to serve it up: Serve the chicken or tofu on or beside the linguine.
