Preparation
#1: 20min

Chop garlic. Slice onion. Cut carrot into 1cm slices. Peel and roughly chop beetroot.

Method
#1: 60min

Preheat oven to 180°C/160°C fan forced. Heat oil in a medium saucepan, add onions and garlic, cook for 3 minutes, add carrots and beetroot, cook for further 5 minutes. Add balsamic and sugar, cook for 5 minutes. Transfer mixture to a baking dish to oven and bake for 30 minutes. Cool slightly. While baking, cook chicken as per ten minute marinade pack instructions. Toss warm vegetables with rocket.
